I've seen on the IMSA site that practice is running for TUSC event on Thursday, which is annoying as we 've already booked flights on that day, ready to start on Friday morning :(

Where/when will registration be, as I'm wondering whether we can dash from the airport, pick up passes and catch some of the action and a quick trackside walk (we'd only get to track at 3pm or so).

For MMS, this event is a 3-day callout Fri-Sun. The Thursday is usually a Promoter test day, which we staff with a limited crew. I see what you mean, in that it appears that there are some official practice sessions scheduled for that day - but that may just be a typo on the part of the series. Test days are usually optional and an extra cost for the competitors.
For now, we are planning a 3 day callout plus a test day.
